魔都的意大利餐厅不下百家,有名的有Mamma Mia,Da Marco,名气小的点有Bella Napoli, Pottomatto,当然所谓的名气小只是中国人不常去而已,在意大利人圈还是人尽皆知的。这些意大利餐厅的老板十之八九来自意大利南部城市Napoli(拿波里),也因此,流传着一句搞笑的话:哪里有拿波里人,哪里就有意大利餐厅。但是,非常奇怪的是有一道家喻户晓的意大利面却不曾见于这些餐厅的菜单上。

相传,是由Ciociaria的农民最先发明的。当地的农民习惯把很多的柴火堆到一起燃烧成炭来制作那种面,因此,有了“炭烧面”的名称。

那么怎么做炭烧面呢?
So how to make spaghetti alla carbonara?

- 长条状的意大利面放入水里煮10分钟,随后捞出备用。
- 在平底锅内放入培根(Bacon),当然意大利人也会用猪肚肉(Pancetta)或者猪脸肉(Guanciale)。肉在油中炒香后,将煮熟的意大利面倒入平底锅内与肉混合。
- 准备一个小碗。碗内放入鸡蛋和黄油。鸡蛋的颜色最好是红色的。不停地搅拌鸡蛋和黄油直到看起来成糊状。
- 糊状的鸡蛋和黄油倒入平底锅内,搅拌意大利面。最后让每根意大利面都染上金灿灿的色彩。

Cook the long strips of spaghetti in water for 10 minutes, then remove and set aside.
Put bacon in the pan. Of course, Italians also use pancetta or guanciale. After the meat is fried in oil, pour the cooked spaghetti into the pan and mix with the meat.
Prepare a small bowl. Put eggs and butter in the bowl. The best color of eggs is red. Keep stirring the eggs and butter until they look mushy.
